French Salade Niçoise
Ingredients: six or seven mini tomatoes per person, 2 hard boiled eggs, a handful of cooked green beans, a head of iceberg lettuce, 1 finely chopped green pepper, 10 black olives, salt, pepper, vinaigrette dressing, a clove of garlic, some basil leaves, anchovy fillets.
Preparation: put the washed salad leaves on the plates, arrange the other ingredients over them and sprinkle with the vinaigrette. Eat with fresh crusty baguette: bon appetit!
Middle Eastern Tomato salad
Ingredients: Mini tomatoes, sliced young spring onions, chopped parsley and a dressing of olive oil, lemon juice, salt, pepper, garlic and cumin.
Preparation: Mix all the ingredients in a bowl, pour on the dressing, serve and enjoy. Makes a deliciously refreshing side dish.
Spanish Salad from Murcia
Ingredients: Mini tomatoes, clove of garlic, lettuce, 2 chopped green peppers, 1 peeled and diced cucumber, one chopped onion and a dressing made from 6 tbs olive oil, 2 tbs white wine vinegar, ½ tsp salt, pinch of sugar.
Preparation: rub the inside of a bowl with the cut garlic, place the washed lettuce inside along with the other ingredients and pour over the dressing. Refrigerate for a while before serving.
Indian Tomato Curry
Ingredients: halved mini tomatoes, 1 tbs flour, 1 tbs turmeric, 70 g butter, 3 chopped onions, 2 dessert spoons curry powder, 1.5 dl stock, 1 dessert spoon coriander seeds, 3 tbs mango chutney, 2 tbs cream.
Preparation: mix the flour and turmeric and sprinkle over the mini tomatoes, sauté these for a moment in the hot butter and remove from the pan. Add the curry powder and onions to the pan and continue to fry. Return the mini tomatoes to the pan together with the stock, salt, coriander and mango chutney. Simmer for a short time before finishing off with the cream. Add a little water if necessary.
Italian Crostini
Ingredients: Mini tomatoes, baguette, onion, garlic, olive oil.
Preparation: spread slices of baguette with olive oil and garlic and bake in the oven or under the grill until crisp. Cut the mini tomatoes in half, mix with the chopped onion and some crushed garlic and spread on the crisped bread.
English Tomato Quiche
Ingredients: flan case, mini tomatoes, 30 g butter, 2 washed, chopped and blanched leeks, 125 ml cream, chopped parsley, salt, pepper.
Preparation: butter a baking sheet, place the flan case on it and fill with the ingredients. Bake the quiche in the centre of a preheated oven for 30 minutes at 180 degrees.
